Spice nuts
For the dough:
3 eggs
150 g sugar
100 g ground almonds
2 tsp cocoa powder (de-fatted)
65 g mixed candied orange/lemon peel (very finely chopped)
1 tsp gingerbread spice
1 pinch white pepper
1 tsp grated lemon rind
300 g gluten-free flour
½ bag of baking soda
For the cast:
250 g sugar
juice of 1-2 lemons
First, beat eggs and sugar until fluffy.
Then add the ground almonds, gingerbread spice, pepper, grated lemon rind, cocoa, orange/lemon peel while stirring.
Mix flour with baking powder and add to egg. Then knead everything to a smooth dough.
Then form dough balls with floured hands and place them on a baking sheet with baking paper.
Bake the spice nuts in a preheated oven at 175° C on middle rack for about 15 minutes.
Immediately glaze with cast after baking and let it dry.
