Gingerbread
Ingredients for 100 pieces:
500 g cooked, cold-pressed potatoes
6 eggs
600 g icing sugar
1 bag pepper pie spice or gingerbread spice (5 tsp)
150 g finely chopped lemon peel and orange peel (mixed)
500 g ground almonds (with skin)
3 packages baking powder
500 g gluten-free white flour
1 tbsp de-oiled cocoa
Make a foamy material from the eggs and the sifted icing sugar (first beat egg whites until stiff, add icing sugar and egg yolks).
Add spice mixture and chopped candied orange peel and ground almonds.
Add pressed potatoes.
Mix flour, baking powder and cocoa powder and sieve into the dough.
Place the dough on a buttered baking sheet.
Place almonds or walnuts on top.
Preheat oven to 180° C, then bake for 20-25 minutes.
