Flan case

3 egg whites (chilled eggs)
3 egg yolks
3 tbsp water
150 g sugar
1 dash vanilla
cinnamon
100 g gluten-free starch/potato flour
100 g gluten-free cake flour
1 slightly heaped tsp baking powder

Beat egg whites and water until stiff.

Add sugar and vanilla/cinnamon while stirring.

Add egg yolks.

Finally add the sieved mixture of starch, flour and baking powder.

Pour dough into buttered form.

Bake at 160-180° C for 25-30 minutes.

Remove from form and let it cool off. Split into two halves and fill if you like.
