Contamination
Contamination is the pollution of actually gluten-free food with gluten. If a product contains gluten or not is often difficult. Thus, many food processing companies do not test their products, leading to the identification of "May contain traces of gluten" of originally gluten-free products on the grounds of legal protection.
The one hundred percent guarantee for gluten-free foods is, however, only for products that are marked as "gluten free".
