Corn

Maize is the world's largest gluten-free cereal. Originally a native crop of Mexico and Peru, corn is used as a crop in Europe only since the 17th century.

Corn is regarded as one of the most important cereals, from which annually about 750 million tonnes are produced and processed into food, but also used as animal food and in the energy industry.

Corn is gluten free and is therefore included in its various processed forms such as flour and polenta in the diet of celiacs.
