Gluten tolerance limit
It is debatable how much gluten is harmful for celiacs. The tolerance limit is individual. An Italian study showed that the safe tolerance limit for all celiacs is 10 mg gluten / day. A normal gluten-containing diet contains 10,000 to 20.000 mg gluten / day.
