Cereals containing gluten

Gluten is found in rye, wheat, barley, spellt, emmer, einkorn, kamut and triticale. For processed foods and finished products celiacs have to make sure that no gluten-containing ingredients were used. Since gluten is often used as an emulsifier, gel, stabilizer and as a carrier of flavors, this is not always evident at first glance.

Oat contain gluten, but differs in the amino acid sequence from other gluten-containing cereal species and does not seem as damaging as other cereals for celiacs. Oat is not recommended for a strict gluten-free diet because impurities by gluten-containing cereals cannot be excluded.
