Unripe spelt grain

Unripe spelt grain is a special form of spelt and contains gluten. Spelt is used for the manufacture of semi-unripe harvested ripe and then dried or roasted. This leads to its spicy flavor. During the heat treatment, the protein is converted, looses its adhesive properties and cannot be used for baking. It is mainly used as a soup vegetable or latke. Unripe spelt grain must be strictly avoided by celiacs.
