Locust bean gum
Locust bean gum is gluten-free and tasteless. It is a polysaccharide that can only partly be digested by the human body and is therefore considered dietary fiber. Locust bean gum can absorb water 80 to 100 times its own weight (five times the swelling capacity as starch), stabilize emulsions and prevent crystallization. For dietary purposes, locust bean gum is used as a baking agent in gluten-free bread.
